Cooking Time



2 medium zucchini, washed and paper thin sliced

1 cloves garlic, minced (you can add more if desire)

1 tsp. kosher salt

1 - 2 tbsp. freshly squeezed lemon juice

2 tbsp. fresh dill, shopped

Olive oil

Black pepper (optional)


  1. Transfer thinly sliced zucchini to a large glass bowl and toss gently with the lemon juice, minced garlic and salt until well combined.
  2. Cover bowl and refrigerate 4-8 hours.
  3. Once you are ready to serve the salad, drain the excess liquid and add fresh dill.  Drizzle with olive oil or any other healthy oil you like. Stir gently and transfer to a shallow serving dish.
  4. Adjust seasoning if necessary.

Best eaten within 24 – 48 hours.
